Our extra virgin olive oil

Our extra virgin olive oil is made exclusively from carefully selected olives grown on our land, where we cultivate only olive trees of the Carolea cultivar, a variety native to Calabria. This distinction has allowed us to be certified as an IGP-Olio di Calabria producer.

The olive groves are located on east-facing hillsides overlooking the sea. The trees take root in sandy, mineral-rich soil—conditions that give our extra virgin olive oil a distinct and recognizable character.

The harvest, carried out by hand, is done directly from the plant during the early stages of ripening.

The pressing process begins immediately after the olives are harvested by hand to bring out the full flavor profile of the Carolea single-varietal olives. Cold pressing takes place in a continuous-cycle system where the temperature does not exceed 27°C.
